  3. Añadimos un poco más de aceite a la cazuela y echamos los pimientos cortados a cuadrados pequeños
  4. Espolvoreamos con cayena y comino y dejamos tres minutos
  5. Luego incorporamos los ajos laminados y el pimentón. Removemos rápidamente durante un minuto.
  6. Pasado este tiempo ya podemos incorporar el tomate y rectificar de sal. Añadimos azúcar para equilibrar la acidez
  7. Regresamos ahora la berenjena y cuando el pisto haya perdido el agua, hacemos los huecos para incorporar los huevos
  8. Salamos las yemas, tapamos y esperamos que cuajen al gusto
