- En el momento de hacer la receta, ponemos aceite en una cazuela baja y, a fuego moderado, salteamos la berenjena. Pasados dos o tres minutos reservamos sobre papel absorbente.
- Añadimos un poco más de aceite a la cazuela y echamos los pimientos cortados a cuadrados pequeños
- Espolvoreamos con cayena y comino y dejamos tres minutos
- Luego incorporamos los ajos laminados y el pimentón. Removemos rápidamente durante un minuto.
- Pasado este tiempo ya podemos incorporar el tomate y rectificar de sal. Añadimos azúcar para equilibrar la acidez
- Regresamos ahora la berenjena y cuando el pisto haya perdido el agua, hacemos los huecos para incorporar los huevos
- Salamos las yemas, tapamos y esperamos que cuajen al gusto
