- Se hace el rabo de toro en salsa con la cebolla, 4 ajos, 200 ml vino y perejil. Se deja cocer unos 40 minutos para que no salga muy duro.
- En la paellera sofreímos todas las verduras con un poco de sal hasta que estén hechas, unos 10 minutos aproximadamente.
- Añadimos después el majado, el rabo de toro en salsa y el arroz y lo sofreímos 5 minutos con el fuego no muy fuerte para que no se pegue.
- Cuando el arroz está suelto y se vaya dorando echamos el agua, 200 ml de vino, la cúrcuma y rectificamos de sal. Lo dejamos 13 minutos y 5 de reposo.
