  5. Salpimentar al gusto y poner un pelín de nuez moscada, seguir removiendo y cuando coja textura espesa incorporar la berenjena y mezclar.
  6. Cocer unos minutos a fuego medio hasta que la masa tenga una textura muy espesa. Si no queda muy espesa, diluir un poco de maicena en un vasito con un poco de agua y agregar a la masa. Apartar del fuego y dejar enfriar tapado con papel film, que esté en contacto con la masa.
  7. Batir los huevos. Coger con dos cucharas un poco de la masa, darle forma, pasarla por el huevo, por pan rallado y terminar de formarla. Si salen muchas se pueden congelar una vez empanadas.
  8. Freír en abundante aceite caliente unos dos-tres minutos y poner sobre papel absorbente.
