  4. Añadimos un chorrito de vino blanco, subimos el fuego. Cocinamos 5 min más. Pasado ese tiempo, añadimos el tomate triturado con una hoja de laurel y la carne anteriormente reservada. Cocinamos 10 - 15 min más a fuego lento.
  5. Mientras, hacemos la bechamel. En una cazuelita ponemos la mantequilla que se deshaga, añadimos la harina. Removemos sin parar. Cuando la harina cambie de color levemente, añadimos poco a poco la leche, sin parar de remover. (Añado la leche poco a poco para controlar el espesor). Agregamos nuez moscada, sal y pimienta negra. Una vez conseguimos el espesor deseado. Apagamos el fuego y reservamos.
  6. Por último, montamos en un plato de barro. Lo untamos con mantequilla, colocamos una capa de berenjena, encima una capa del sofrito, otra capa de berenjena, de nuevo, una de sofrito, otra de berenjena, un poquito de sofrito, vertemos por encima la bechamel. Un puñado de queso de gratinar. Unos piquitos de mantequilla para que no se queme y gratinamos 15 min a 200 hasta que esté doradito. Y delicioso!!!
