  2. Jamón serrano
  3. 200 gr gambas
  4. 1 l leche
  5. Harina
  6. Mantequilla
  7. Nuez moscada
  8. Aceite de oliva
  9. Sal
  10. Queso rallado

Steps to make to make Berenjenas a la crema

  1. Lavar y cortar las berenjenas en rodajas. Colocar en un bol y frotar con un poco de sal para que suelten agua y quitar el amargor. Dejar diez minutos y quitar la humedad con papel de cocina.
  2. Poner las berenjenas en una llanda de horno, añadir un chorrito de aceite de oliva y una pizca de sal. Hornear unos 15 o 20 minutos a 200º, deben quedar doraditas.
    En la receta original las berenjenas se fríen, pero yo prefiero hacerlas en el horno para que no tengan exceso de aceite.
  3. Mientras horneamos las berenjenas preparamos la bechamel (versión rápida que me enseñaron).
    En una olla ponemos a calentar 3/4 de litro de leche. Añadimos una cucharada de mantequilla, nuez moscada al gusto (yo suelo echar como una cucharada) y una pizca de sal.
    En un cazo aparte ponemos el otro cuarto de litro de leche y mezclamos con tres cucharadas colmadas de harina. Removemos bien. Cuando la leche empiece a hervir añadimos la mezcla anterior de leche y harina y removemos hasta que espese.
  4. Cortamos el jamón a tiras o trozos pequeños. Las gambas debemos cocerlas si son congeladas porque si no soltarán mucha agua al cocerse en el horno. Si son frescas podemos ponerlas peladas directamente sin necesidad de cocer.
  5. En la fuente vamos poniendo capas de berenjena, jamón serrano y gambas. La última capa la cubriremos con la bechamel y pondremos queso rallado al gusto por encima. Horneamos 25' a 200º.
